3 tbsp olive oil
2 cloves garlic thinly sliced
1 small red pepper cored deseeded and thinly sliced
200 g raw prawns defrosted and patted dry
2 tbsp soy sauce
100 g spinach leaves
Heat a wok and add 2 tbsp of olive oil and stir fry the garlic slices until they golden and place them on kitchen paper to drain. Toss the peppers and stir fry for 1 minute amd set aside. Stir in the prawns and simmer for 3 minutes until thoroughly cooked, add the soy sauce throw in the spinach and stir fry until it begins to wilt. add the garlic and serve immediatrely.
