KOURABIEDES GREEK CHRISTMAS BUTTER BISCUITS


 


600 g  butter

100 g icing sugar

15 g baking soda

1 vanilla

15 ml METAXA brandy

1 kg plain flour

1 tsp baking powder

Pinch of salt

100 g baked almonds. finely chopped

2 eggs

Icing sugar


In a mixer cream butter and icing sugar until light and fluffy for about 4 minutes. add the soda, vanilla, and brandy and blend to combine. then slowly add the flour baking powder and salt and stir the dough, Stir in the eggs, one at a time. and the chopped almonds, Place the dough in a bowl and shape small spheres and press each center with your finger and place on a baking tin lined with baking parchment.

Bake in an oven preheated to 180 C (350 F) for 20 minutes and set aside to cool. Sprinkle with masses of icing sugar and heap on a dish.
