CAKE
2 1/2 cups plain flour
1 1 /4 cups sugar
1/2 tsp baking powder
1 tsp salt
1 tsp grated nutmeg
3/4 cup milk
1/2 cup + 2 tbsp melted butter
2 eggs
1 vanilla
3/4 cup jam
TOPPING
1/2 cup sugar
2 tsp ground cinnamon
1/2 tsp salt
1/4 cup butter
Preheat oven to 180 C (350 F) and line a 30 cm round cake tin with a round buttered parchment paper
In a large bowl, whisk together flour, sugar, baking powder, salt and nutmeg In another bowl mix milk, melted butter, and vanilla. Add milk mixture into flour mixture stirring until just comnbined.Pour half the batter into the prepared pan Spoon remaining butter into a piping bag. Pipe a tiny ring of batter inside edge of the pan and spoon the jam in the center. Pipe the remaining batter on top of the jam and smooth with a spatula.
Bake for 55 minutes to one hour unil a wooden pick inserted in the middle of the cake comes out clean. Let cool in the pan for 10 minutes and run a knife around the edges to loosen the cake and turn it out. Brush the top with melted buter and sprinkle the topping.
