If you omit the sausages you shall have a delicious vegetable soup
1(16 oz) package of pork sausages
3 medium potatoes, peeled and cubed
1/2 medium head of cabbage, cored and shredded
1 cup diced tomatoes
1 medium onion. peeled and grated
3 cloves of garlic, peeled and minced
2 tbsp tomato paste diluted in water
2 carrots, diced
1 tbsp olive oil
1 tsp sugar
Salt and pepper to taste
2 cups water
Chopped parsley and cream for garnish.
Saute the onion and garlic in a little olive oil until translucent and set aside. Cook the sausages, potatoes, cabbage, and diced tomatoes, and season with sugar, salt, and pepper to taste.
Place all the above ingredients in a saucepan, cover with 2 cups of water and boil until tender.
Serve with chopped parsley and drizzle with a little cream.
