This is a delicious, juicy cake that my dear friend Mary Xenakis used to bake for us so many years ago. You could use almonds and hazelnuts instead of walnuts.
112,5 g ( 1/2 cup) butter or margarine softened
400 g (2 cups) or less sugar
2 eggs
300 g (2 cups) plain flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp grated nutmeg
1 tsp cinnamon
4 apples, peeled and finely chopped
75 g (1/2 cup) chopped walnuts
First mix the flour with the salt, baking powder, and spices. In a large bowl, stir the butter, sugar, and eggs until just combined. Then add the flour mixture and finally the apples and walnuts and stir until just combined. Spoon equally in two loaf tins.
Bake in an oven preheated to 180 C (350 F) for one hour. Thank you Mary dear, for the delicious recipe! Serves 8-10
