GREEK STYLE ROAST PORK WITH HONEY SAUCE


 

1 and 1/2 kg pork leg

1.2 kg medum potatoes

Juice of 3 oranges

Juice of 1 lemon

2 tbsp mustard

2 rbsp honey

2 tbsp olive oil 

Fresh rosemary

Fresb thyme

Salt and pepper to taste.


Rub the pork with salt and pepper and place in a large baking pan.  Peel and cut the potatoes into wedges and place in the pan.

In a large bowl, add the orange juice, lemon juice, mustard. honey and olive oil and mix until combined. 

Pour the mixture over the pork and potatroes, add a whole clove oof garlic, sprinkle the pork wth some rosemary, season the potatoes and sprinkle with fresh thyme.

Preheat the oven at 200 C and bake uncovered for 20 minutes. Lower the heat to 180 C and bake for 1 hour adding half a cup of hot water to the pan  if it looks to be drying out.
