CAKES

                                                   RAISIN BREAD

 

 

 

This is not bread it is a very tasty cake. Find the recipe below

 

2 cups plain flour

3 tsp baking powder

Pinch of salt

½ cup of sugar

4 tbsp butter

¾ cup milk

2 eggs

1 cup of raisins soaked in boiling water

 

Pour hot water over raisins and let soak for 15 minutes and drain.  Sift flour, baking powder, and salt in a bowl. Add the butter and rub until the mixture resembles sand,  Add the raisins and sugar and stir until well incorporated.  In another bowl beat the eggs and milk until frothy and mix thoroughly with the dry ingredients.  Heat the oven to 180 C (350 F) and line a round dish with buttered baking parchment.  Spoon the batter into the dish and bake for 40 minutes or until a tester inserted in the center of the cake comes out clean. Allow to cool and overturn on a dish and serve.

 

 

                                                RUM RAISIN CAKE

 

 

½ cup vegetable oil

¼ cup sugar

2 eggs

1 vanilla

½ cup yogurt 000

1 ¼ cup plain flour

1 tsp baking powder

1 tsp baking soda

Pinch of salt

3 tbsp rum

1 cup seedless raisins

 

Soak the raisins in rum for 1 day and preheat the oven to 180 C and line a baking tin with buttered baking parchment and set aside;

 

Whip oil with sugar, vanilla, and yogurt until light and fluffy, add the raisins, and mix well together.  Sift the flour, baking powder, soda, and salt over and mix thoroughly until no traces are evident.  Spoon into the baking tin and bake for 40 minutes or until a tester inserted in the center of the cake comes out clean.  Remove from the oven and cool before serving.

           

 

                                         BANANA CHOCOLATE CHIP BISCUITS 



2 bananas

1 1/4 cup plain flour

1/2 cup plain sugar

1/3 cup soft butter

1 egg

1 vanilla

1/2 tsp cinnamon

1/4 tsp baking powder

1/4 tsp baking soda

1 cup chocolate chips

Pinch of salt


Preheat the oven to 180 C (350 F) and mash the bananas with a fork in a bowl.  whip butter and sugar until light and fluffy.  In another bowl, whip the egg, bananas, and vanilla until well combined.  Add the flour, baking powder, baking soda, and salt to the banana mixture and mix well then stir in the chocolate chips.  


Drop spoonfuls of the batter on tins lined with buttered baking parchment and bake for approximately 12- 15 minutes until the biscuits are crisp, this recipe makes 30 biscuits.
