Ingredients:
3 large potatoes, peeled and cut lengthwise
3 carrots, peeled and sliced lengthwise
500 g (1 lb) boiled peas
3 dill pickles
1 onion, peeled and finely chopped
2 hard-boiled eggs
3 tbsp mayonnaise
2 tbsp yogurt
Salt and freshly ground white pepper to tast4
Boil the potatoes and carrots in salted water for 15 minutes until tender. Drain and rinse with cold water until cold and dice potatoes and carrots.
Combine potatoes,carrots, peas, pickles, onion and eggs together in a large bowl. Stir mayonnaise, yogurt, salt and pepper into the potato mixture until well combined. Cover bowl with cling film and refrigerate until cold, for at least 30 minutes.
