Ingredients:
2 large boneless, skinless chicken breasts, cooked in slightly salted water, then chilled and diced, about 4 cups
1 cup chopped celery
1 1/2 cups halved seedless grapes
1 cup mayonnaise
1/2 cup yogurt
1 tbsp lemon juice
1 tsp mustard
Salt to taste
2 tbsp chopped fresh parsley
1/2 tbsp chopped dill
Place the diced chicken, celery, spring onions and grapes in a large bowl and stir to combine. In a medium-sized bowl add the remaining ingredients to make the sauce and stir to combine, Pour the mayonnaise sauce over the chicken mixture and stir to thoroughly coat it. Cover and chill in the fridge for 4 hours before serving.
Serve on a bed of lettuce with sliced tomato and avocado.
