PAELLA VALENTINA

 1 tbs olive oil

1/2 1 a 4 pound  whole chicken cut into 6 pieces

1/2 a 2 pound rabbit, cleaned and cut into 6 pieces

1 head of garlic, cloves separated

1 medium tomato finely chopped

1 can of butter beans

1 can of peas

1 can green beans

Paprika and salt to taste

A pinch of saffron threads

A pinch of thyme

A pinch of dried rosemary

3 cups short-grain rice

Heat a paella pan over medium heat and coat with olive oil add chicken, rabbit and garlic and cook until nicely browned and place at the sides of the pan  and add  butter beans, peas and green beans Season to taste with paprika and salt and mix well.

Fill the paella pan to the top with water measuring the water so as to determine how much rice to use bring to a boil and simmer to for 1 hour to make a tasty broth. 

Season with paprika. salt, saffron, thyme and rosemay. Stir in half the anount of rice to water, reduce the heat and simmer until all the liquid has been absorbed., abour 20 minutes. The paella has an exquisite taste,

Serve with pasta or fried potatoes.
