GOURMET RECIPE WITH PRAWNS

                                        Prawn and Tomato Risotto


1 kg (2 lb) prawns, deveined, thoroughly washed and patted dry

1 onion, peeled and grated

3 cloves garlic, peeled and minced

Olive oil

2 cups tomato juice

Salt and pepper to taste

White wine


2 cups of rice boiled in salted water, drained and drizzled with olive oil 


Saute the onion and garlic in olive oil and pour in the tomato juice and cook until the juice thickens into a sauce.  Meanwhile, simmer the prawns in white wine, one minute per side, until they turn pink stir into the tomato sauce and serve over the boiled rice and enjoy!

QUEEN ELIZABETH'S PLATINUM ANNIVERSARY CONTINUED

 Queen Elizabeth's platinum anniversary was commemorated with fireworks, the Armed Forces marched and Prince William said to the Queen:  "Your Majesty, Mummy, I wish to express our profound admiration to you for being our Queen for so long."  

FIRES IN ATTICA

 A vast fire in the southern suburbs of Athens (Panorama in Voula) is in full blast despite the fact that the fire brigade aided by the armed forces, the police and 7 aircraft are trying to distinguish the flames.   


People did not want to leave their homes but they must evacuate them and leave the vicinity because houses can be rebuilt but lives are lost.


Houses and cars were burnt but, fortunately, no lives were lost.  The mayor of Voula said that an old people's home  caught fire and it had to be evacuated and the residents moved to safety.  THERE ARE SUSPICIONS OF ARSON.

QUEEN ELIZABETH'S PLATINUM JUBELEE ON THE CROWN

2022 a three-day celebration to honor the event, The British Armed Forces paraded and were attended by the Royal Family but the Queen only saw the festivities from a balcony of Buckingham Palace, where she received a  clapping ovation from her subjects.  Great Britain and the Commonwealth celebrated the glorious event with torches lit all over the place and the whole world watched the televised version. Long live the Queen, Britain, and the Commonwealth!!

SOUTZOUKAKIA - SAUSAGE-SHAPED PATTIES

 1/2 kg minced beef

4 slices of coreless bread soaked in white wine and squeezed dry

1 onion, peeled and grated

2 cloves garlic, peeled and minced

Salt and pepper to taste

Flour and olive oil for frying


Mix the first four ingredients together, make sausage-shaped patties, dredge in flour and fry in olive oil on both sides. 


Tomato sauce:

2 cups thick tomato juice

1 tbsp  sugar

Salt, pepper and cumin to taste


Simmer all the ingredients for the sauce until it thickens, place in the sausage-shaped patties and simmer gently for 30 minutes until cooked.  Serve with creamy mashed potatoes,

JUNE

                                                                                                                                                                            

 Yesterday was the 1st of June 2022.  Let us hope that it will be a better month than May was. That the war in Ukraine will end and that there will be no more wars in the world, which is most improbable. There is nothing worse than war for mankind.

 

I remember, when I was a child, during World War II the horror of the battles where so many young people were killed, both military and civilians and it is still considered as the greatest slaughter of mankind. I shan’t go into gory details so as not to upset you dear Reader

DAKIS

                                                                                           

 Unfortunately, the popular Greek singer, Dakis (Thakis) died of cancer at the age of 79.  He was born in Egypt and spoke and sang in 6 languages.   His fellow singers, the band that plaid for him and Greek public opinion are thoroughly devastated by the tragic news.

 

My sincere condolences to his loved ones, and may they be consoled with the fact that he was a very popular singer and an extremely nice and interesting person.
