SOKOLATINA

SOKOLATINA

Add caption

This is a recipe for a luscious chocolate cake by Argyro Barbarigou a famous Greek chef and pastry cook.  I have changed it slightly

For the Cake:
120 g butter, softened
250 g sugar
2 medium-sized eggs at room temperature
1 pinch of salt
1 tsp baking powder
1/2 tsp  baking soda
1 vanilla
50 g cocoa powder
160 g plain flour
160 g  milk
A cocoa liqueur to soften the cake

Chocolate Cream:
250 g butter, softened
450 g icing sugar
2  pinches of salt
70 g cocoa powder
1 vanilla
4 tbsp cream

First, prepare the cake.  Grease 3 round tins with butter and line each with baking parchment.   Heat the oven to160 C (320 F).   Sift flour, cocoa powder, baking powder, baking soda and salt together and whip butter and sugar until light and fluffy.  Add the eggs one at a time, stir in half the sifted ingredients, all the milk and, then, the remaining sifted ingredients.

Fill the 3 baking tins,  evenly, with the batter and bake for 25-30 minutes until puffed and golden. allow to cool a little in the tins, then turn out to cool completely.

Meanwhile, prepare the chocolate cream.   Whip butter until light and sift in the icing sugar, cocoa powder and salt and fold gently to combine.   Add the vanilla and the cream in small portions in order to reach the preferred density.

To Assemble the Cake:
Cut a fine slice from one of the sponge cakes and blend it to fine crumbs and reserve.   Place one of the cakes on a dish and moisten with coffee liqueur (Tia Maria).   Spread with a thin layer of chocolate cream,  Repeat the same procedure twice more and then spread chocolate cream all over the cake.   Finally, sprinkle with the reserved chocolate crumbs. and decorate with strawberries.

ALMOND NOUGATINA

This is a delightful dessert which is very popular all over Greece.

                                                 ALMOND NOUGATINA

2 1//2 cups  raw almonds, skin on
1 tbsp plain flour
10 large egg whites
1 cup granulated  sugar
1 tsp vanilla

Filling:
1 1/2 cup whole milk
1 cup cream
5 tbsp sugar
2 tbsp cornflour
1 tsp vanilla
50 g butter

Frosting:
100 g mascarpone
1 1/2 cup  whipping cream
1/3 cup icing sugar
1 vanilla

Fresh strawberries for garnish

For the cake, preheat oven to  180 C  (350 F), Grease the base and the sides of 2x23 cm cake pans with removable sides.   Line the bases with baking parchment, also grease the parchment with butter.

Place the almonds and flour in a food processor and pulse until the almonds are finely ground.   Whip the egg whites light and foamy, then add the sugar a spoonful at a time and keep on whipping until they reach the stiff peak stage.    Then whip the egg yolks with a little sugar until the yolks have tripled in bulk.

With a spatula gently mix the egg yolks with the meringue and gently fold in the almonds.   Divide the batter between the two pans and bake for 10-15 minutes or until a tester inserted in the middle of the cakes, comes out clean.

Pastry Cream:
In a bowl whip cornflour and eggs and set aside.  In a saucepan, pour in milk, sugar and vanilla and bring to the boiling point and remove the saucepan from the stove and set aside to cool a little.   With a ladle start pouring the milk into the egg mixture while whisking constantly.   Add at least half of the milk into the egg mixture and transfer the pot to medium-high heat and keep on whisking until it thickens.   Cover the custard with cling film,  to prevent it from forming a skin on the top.  Reserve the custard until it reaches room temperature.

Whipped Cream:
Whip until the cream is thick, adding sugar a spoonful at a time, then cover and ice.

Put  together:
Once the pastry cream has cooled down completely, whisk it at low speed, until it is smooth and creamy again.  Do not overbeat.  Cover with cling film and refrigerate for 2-3 hours.

Place the first cake on a dish and spread with a thick layer of pastry cream,  Do exactly the same with the next layer.

For Decorating:
Spread the whipped cream on top and all around the cake or use a piping bag if you prefer.  Do exactly the same with the next layer.  Heat a pan and toss in the almond flakes until golden and place in a bowl to cool. Decorate the cake with the flaked almonds, add the strawberries and refrigerate for 5-6 hours before cutting and serving.

A DEVASTATING INFERNO DESTROYS AUSTRALIA

Fire Map Showing the Inferno in Australia

Thanking CNN for this Amazing Photo

"Record-breaking high temperatures" and "four months of severe drought", have brought about a series of enormous bush fires across the lovely continent of Austalia,   Thousands of fire-fighters and volunteers have been fighting the flames, which have started since last September, leaving at least 24 dead, 2000 buildings and more than 65.000 sq kilometres of beautiful land burnt to ashes.

(I wish to thank the Greek and the International press for the valuable information for this post.)

Our heart goes out to all those who have lost their loved ones and our deepest admiration for the tireless firefighters for their amazing way of tackling the flames of this scalding tornado.   Let us all join in prayer for rain that will turn this infernal nightmare, into a tragic memory.

A VERY HAPPY 2020 TO THE WHOLE WORD!!

"Pomegranates" for Good Luck by George Iacovides

"New Year's Celebrations" by Spyros Vicatos

We hope and pray for world peace and tranquillity during 2020 and may new medicaments be discovered to heal incurable diseases, with tragic consequences, that bring so much agony and pain to mankind.

Let us, also, try to become full of tolerance, compassion, efficiency, industriousness, conscientiousness, patience, perseverance and last but not least sanity, this last quality is particularly important for the world's leaders. After reading "Coping With Post-Democracy" by Colin Crouch,  I realised, with anguish, that it just needs "a psychopathic act to start a war", as my grandson Alex S. Kokkalis, PhD at the Technical University of Copenhagen had pointed out to me, several years ago.
